Masseria San Domenico opened in 1996 as a restored 15th-century fortified watchtower-masseria — originally built by the Knights of Malta as part of the Adriatic-coast defensive system against Turkish raiders — on the Apulian coast at Savelletri di Fasano. The property is, by general consensus, the original Pugliese luxury masseria — the property that established the category of restored-fortified-farmhouse luxury hotels in Puglia, and the model that subsequent properties (Borgo Egnazia, Torre Coccaro, Torre Maizza, others) have built on. The 56 rooms split between the main masseria building (with restored stone walls, original arched ceilings, and the ancient watchtower architecture), the Sea View Suites (in the seaward extensions with direct Adriatic views), and the larger Junior Suites and Suites in the masseria's original quarters.
