The Hotel

Borgo Santo Pietro is a restored medieval Tuscan village near Chiusdino in the Siena province, founded as a hospice for pilgrims on the via Francigena route in the 13th century, restored over a multi-year programme by Danish founders Jeanette and Claus Thottrup beginning in 2001, and a Relais & Châteaux member since 2013. The property is one of the most idiosyncratic and personally-shaped luxury hotels in Italy, the Thottrup family remains involved daily, the staff are deeply trained, and the property's identity is the family's vision rather than a corporate template.

The suites are distributed across the original medieval village buildings, restored stone houses, converted farm buildings, and the main villa, whose eight individually themed rooms and suites are crowned by the Santo Pietro Grand Suite across the full south wing. The most-booked are the Garden Suites with private terraces and gardens; the newer pool suites add private pools and their own courtyards.

The property's biodynamic farm, over 200 acres of organic gardens, orchards, vineyards, dairy, and beehives, is the kitchens' source. The kitchen team uses 95% farm-sourced ingredients and the daily menu reflects what the gardens produced that morning. The combination of the farm-to-table programme and the chef's work has earned Saporium (the property's main fine-dining restaurant) a Michelin star and a Michelin Green Star for sustainable gastronomy.

The wellness programme runs at the Seed-to-Skin Atelier, a research-and-product-development laboratory on the property where the resident scientific team formulates the property's own natural skincare line, used in spa treatments and sold via the Borgo Santo Pietro brand. Daily yoga at the meditation pavilion, the swimming pool overlooking the Tuscan valley, and the-farm tours that explain the operation. Service at Borgo Santo Pietro is the most personal in Italian luxury, the staff-to-guest ratio is among the highest in the country, the family is involved daily, and the experience is closer to staying at a private Tuscan estate than at a hotel.
