A 13th-century medieval village restored as a 21-suite Relais & Châteaux property — and a working biodynamic farm whose dairy and gardens supply two Michelin-starred restaurants on the property.
"13th-century medieval village restored as 21 suites. Two Michelin stars. Biodynamic farm supplying the kitchen. The most refined small-property Tuscan luxury."
Borgo Santo Pietro is a restored medieval Tuscan village near Chiusdino in the Siena province, founded as a hospice for pilgrims on the via Francigena route in the 13th century, restored over a multi-year programme by the Thuesen-Dahl family beginning in 2001, and operated as a 21-suite Relais & Châteaux property since 2010. The property is one of the most idiosyncratic and personally-shaped luxury hotels in Italy — the Thuesen-Dahl family lives on-property, the staff are deeply trained, and the property's identity is the family's vision rather than a corporate template.
The 21 suites are distributed across the original medieval village buildings — restored stone houses, converted farm buildings, and the central villa Casa Cinque. Every suite is individually designed; the most-booked are the Garden Suites with private terraces, and the larger Casa Cinque suites in the main villa. The new garden-villa accommodations added in 2019 push the total to 21 with private pools and outdoor kitchens.
The property's biodynamic farm — over 200 acres of organic gardens, orchards, vineyards, dairy, and beehives — is the kitchens' source. The kitchen team uses 95% farm-sourced ingredients and the daily menu reflects what the gardens produced that morning. The combination of the farm-to-table programme and the chef's work has earned Saporium (the property's main fine-dining restaurant) its second Michelin star — the only two-Michelin-starred restaurant in Italy run as part of an integrated farm-luxury-hotel system.
The wellness programme runs at the Seed-to-Skin Atelier — a research-and-product-development laboratory on the property where the resident scientific team formulates the property's own natural skincare line, used in spa treatments and sold via the Borgo Santo Pietro brand. Daily yoga at the meditation pavilion, the swimming pool overlooking the Tuscan valley, and the working-farm tours that explain the operation. Service at Borgo Santo Pietro is the most personal in Italian luxury — the staff-to-guest ratio is among the highest in the country, the family is involved daily, and the experience is closer to staying at a private Tuscan estate than at a hotel.
The Tuscan anniversary for couples who already had the conventional luxury experience and want the most personal and refined version. Book a Casa Cinque suite. The Saporium two-Michelin-star tasting menu; the farm tour; the Seed-to-Skin spa experience. The Thuesen-Dahl family handles vow renewals at the property's small medieval chapel with a personal touch that larger luxury properties cannot match.
The Tuscan honeymoon for couples whose taste runs to the most idiosyncratic and personally-shaped luxury. Book a Garden Villa with private pool. The combination of the family-owned operation, the biodynamic farm, the two-Michelin-star dining, and the Seed-to-Skin product development gives a layered experience few other Italian properties offer.
Borgo Santo Pietro's Seed-to-Skin programme combines the property's own natural skincare research with traditional spa treatments and yoga. Multi-day wellness retreats are available with the in-house team. The biodynamic farm provides the dietary side; the on-property meditation pavilion the contemplative side. For travellers who want the full integrated Tuscan wellness retreat.
