The Hotel

1 Hotel Copenhagen opened in 2025 as the 1 Hotels brand's first continental European flagship — a 282-room property in the heart of the Latin Quarter, occupying and reworking the building that had previously held the well-regarded Hotel Skt Petri. The Starwood-Capital-owned 1 Hotels group (founded in Manhattan in 2015 by Barry Sternlicht around a single principle: that biophilic, nature-led design and operations could be made to work at five-star pricing) chose Copenhagen for the brand's continental-European debut for an obvious reason — it is one of the world's most genuinely sustainable cities, and the brand's mission language reads less like a marketing position there and more like the local default. Krystalgade 22 puts the hotel five minutes' walk from Strøget, three minutes from Rosenborg Castle, and at the centre of the city's Latin Quarter.

The 282 guest rooms and suites are larger than the central-Copenhagen average, with parquet floors made from reclaimed Danish oak, walls finished in Scandinavian marble paint and naturally pigmented clays, and bathrooms fitted in Solnhofener limestone. The brand's signature features — the chalkboard headboard, the bedside hemp-water carafes, the in-room laundry hampers in raw linen — read sincere here in a way they sometimes do not in the brand's American properties. The named suites include the Garden Suite (with a private planted terrace) and the King's Suite at the building's top corner. Around 90% of the materials in the room build-out are either reclaimed, certified locally-sourced, or recycled.

The food and beverage programme is led by Green Michelin-starred Chantelle Nicholson, the New Zealand-born, London-based chef whose Apricity in Mayfair holds a Green Michelin star and who has built her professional reputation around seasonal, low-waste, predominantly plant-led cooking. The hotel's signature restaurant, the all-day kitchen, and the lobby café all run under her direction. The menus change with the Danish season; the supplier list reads as a roster of small Zealand growers; the wine programme leans toward natural and biodynamic producers. The brand's sustainability disclosures are unusually specific — composting, district heating powered by waste and wood chips, an air-to-air HVAC with energy recovery, smart occupancy sensors throughout, and the "1 Less Thing" programme (which donates gently-worn clothing left behind by guests to JunkFood, a Copenhagen-based charity that prepares meals from food waste).

The Bamford Wellness Spa — the British natural-skincare brand's only Northern European spa — runs treatments using its own organic, biodynamically-grown ingredients. The fitness floor is open 24 hours and includes a small lap pool. Atrium-side rooms look down onto the planted central courtyard that is the building's most distinctive design feature; the Latin-Quarter-facing rooms look out onto Krystalgade and the lower-level retail of the area. The hotel is in its first operating year and is still settling into its service rhythms, but the property is already booking like a top-three Copenhagen address — and the Bamford spa, Chantelle Nicholson kitchen, and biophilic design language give it a value proposition that is genuinely distinct in the city.

For wellness retreats — and particularly for guests who want a Northern European address that does not require a flight to a remote destination — 1 Hotel Copenhagen is the most considered choice in Scandinavia. The Bamford Wellness Spa is a serious facility (the only one of the brand outside the UK and the US), the in-house kitchen is biodynamically led, the bedrooms are built around natural materials, and the city itself supports a wellness day at every step (the harbour swim baths, the Søerne running loop, the cycle infrastructure). The brand's signature in-room yoga mats and meditation cushions are also the most useful versions of those gestures we have seen.

Honeymoon

For Copenhagen honeymoons that want the new and the considered rather than the historic, 1 Hotel Copenhagen is the answer that the d'Angleterre's traditionalist register cannot match.
