The Hotel

Waldorf Astoria Los Cabos Pedregal opened originally as Resort at Pedregal in 2009 on a private mountainside on the Pacific edge of Cabo San Lucas, and was rebranded as Waldorf Astoria in 2018 after acquisition by Hilton's luxury portfolio. The property's most distinctive feature — and the architectural premise that the development team built around — is the privately-owned tunnel that runs through the rock headland separating Cabo San Lucas town from the resort's mountainside, giving the resort its own access road that the public cannot use.

The 115 rooms and suites are distributed across the mountainside in a series of buildings that descend from the upper-level casita category to the beachfront suites at the property's lower edge. The Mountain View Casitas are the entry; the Ocean View Casitas have direct Pacific views; the Master Suites and the Two-Bedroom Casitas are the larger configurations; and the multi-bedroom Pedregal Villas (the property's flagship category) include three- and four-bedroom standalone villas with private pools and butler service.

The grounds include the heated swimming pools (with the main beachfront pool one of the most photographed in Cabo), the spa, the fitness centre, the on-property art collection, and the resort's private beach. The beach is on the more rugged Pacific side rather than the calmer Sea of Cortez side — meaning the swimming-from-the-beach experience is more limited, but the wave-watching and surfing access are excellent. The Don Manuel's restaurant — named for the property's first general manager — is the property's headline Mexican fine-dining venue.

Dining is at three main restaurants. Don Manuel's is the headline Mexican fine-dining. The Beach Club is the all-day casual. El Farallón is the property's signature restaurant — built directly into the cliff face overlooking the Pacific, with a daily-changing seafood menu and one of Cabo's most photographed dining rooms. Service is the consistent Waldorf Astoria standard delivered by a heavily Mexican team. The combination of the private-tunnel access, the mountainside layout, the El Farallón cliff restaurant, and the Waldorf Astoria operational discipline makes this the most distinctively-located luxury Cabo resort.
