The Hotel

Le Soleil d'Or sits on a 20-acre clifftop estate on Cayman Brac, the smaller eastern island of the Cayman trio, about 90 miles from Grand Cayman, with a permanent population of roughly 2,000 and a single small commercial cluster at West End. The island takes its name from the Cornish word for bluff, after the 140-foot limestone ridge running along its eastern half. This is nothing like Grand Cayman's Seven Mile Beach resort strip: Cayman Brac is a quiet fishing-and-farming out-island, and Le Soleil d'Or is the only luxury hotel on it, or on neighbouring Little Cayman.

The seven keys, two of them suites, are spread across the clifftop estate, a mix of free-standing cottages and rooms in the central building. Each is individually configured, roughly 75 to 150 sqm with private outdoor space, restored Caribbean-hardwood detailing, hand-loomed local textiles and custom tropical-hardwood furniture, and the farm is never far from view. The Cliffside Suite, the largest at about 150 sqm, has a private outdoor pool and a direct cliff-edge sightline over the Caribbean Sea.

What sets Le Soleil d'Or apart from every other Cayman property is that it is built around a working organic farm. The 20-acre estate grows over 300 varieties of fruit, vegetables and herbs, and most of what the kitchen serves is picked on site. The farm-tour-and-cooking-class programme is the signature draw: guests can spend a half-day on the farm with the growing team, and dinner is built around whatever came out of the beds that morning.

Dining centres on the farm-to-table restaurant in the central building, where the daily-changing menu follows that day's harvest. A small wooden walkway gives direct access to the Caribbean Sea at the cliff edge for bathing and snorkelling. Be clear-eyed about what this is and isn't: there is no large-resort infrastructure here, and reaching Cayman Brac means a connecting flight from Grand Cayman. But for a solo retreat, a quiet anniversary, or a wellness-minded stay built around the farm and the sea rather than a spa and a swim-up bar, it is the most distinctive address in the Cayman Islands.
