Spa Eastman opened in 1977 when Jocelyna Dubuc bought a small piece of forested land in the village of Eastman and built a retreat around four ideas she had taken from European thermal medicine, North American food culture, and Quebec rural simplicity. Meals are plated and served (the property declines the all-you-can-eat resort buffet on principle), and guests with dietary preferences are briefed in advance and accommodated cleanly.
