The hotel's ace is the wine cave — a private dining room in the lava-rock cellar where the chef serves a six-course tasting menu paired with Assyrtiko and Vinsanto wines from the island. It is the longest dinner on the caldera in the best sense; you arrive at 8pm and leave at midnight. Canaves operates with a calmer tone than Katikies — fewer Instagram tours, more returning guests.
