Grace Hotel Santorini, an Auberge Resorts property, is the contemporary alternative to the Oia cave-hotel form. The hotel sits on the Imerovigli cliffside, the highest village on the caldera, two hundred metres above the sea, and the architecture is intentionally pared back: white plaster, pale wood, none of the blue-domed nostalgia of Oia. Twenty rooms and suites, all caldera-facing, the upper tiers with private plunge pools. The Champagne Lounge, open-air, on the cliff edge, is one of the most-recommended sunset bars in Greece. The wine list is the strongest in Imerovigli (over six hundred labels, run by a Master of Wine since 2018). Grace is the honeymoon hotel for couples who find Oia too photographed and want the Imerovigli height instead. The walk down to Skaros Rock, the cliff promontory directly below the hotel, is one of the great fifteen-minute Santorini walks, and the view of Imerovigli from the rock back is the inverse photograph of the Oia sunset.
