Independent reputation

Real destination restaurants have separate review profiles, separate guidebooks coverage, separate awards.

Independent staffing

Real destination restaurants have separate management, separate kitchen brigades, separate front-of-house teams. The restaurant is run as its own business inside the hotel.

Independent identity

How to plan a hotel restaurant trip

Three rules:

Book the restaurant before the hotel

For a chef-driven trip, the restaurant reservation is the constraint. Book the table first, then the hotel rooms around the dates that work.

Book multiple visits

For first-time visits to a three-Michelin hotel restaurant, book lunch and dinner across two days. The lunch experience is typically less crowded and slightly less expensive; dinner is the iconic version. Both have value.

Stay overnight

For three-Michelin meals, do not drive. The wine programme is part of the experience. Stay at the hotel.

Five rules for hotel restaurant selection

  1. Verify the chef and restaurant identity beyond the hotel
  2. Book tables 8-12 weeks ahead for top hotel restaurants
  3. Stay overnight to engage with the wine programme
