What it is
A multi-course dinner (5-10 courses) prepared in the hotel kitchen and served in your suite by a chef de cuisine and waiter. Total experience: 2.5-3 hours. Cost: typically $400-$1,500 per person depending on hotel and menu.

When to book
48-72 hours' notice for the kitchen to plan the menu. Dietary restrictions discussed at booking.
For special occasions, request a courses card with the celebrant's name. Most properties handle this without prompting if you mention the occasion.
What to expect
A team arrives. Tables are set. Wine is poured. Courses arrive timed. The team retreats between courses but is always within reach.
The chef may visit at the end. The dishes are documented in a take-home menu card. The next-morning room service includes a "thank you" amenity.
